Elly’s Gourmet Confectionery began in 2014 with a simple idea and a well-worn
kitchen bench. Founder Sophie Creek had a passion for experimenting with recipes, reworking traditional sweets into something fresher, more indulgent, and distinctly Tasmanian. What started as small-batch trial and error quickly became a pursuit of perfection - refining flavours, textures, and techniques to create treats that felt both nostalgic and entirely new.
Sophie believed the secret to exceptional confectionery wasn’t complicated; it was about starting with the kind of ingredients you’d find in your grandmother’s pantry—real butter, Australian cane sugar, fresh nuts, and honest flavourings. No shortcuts. No artificial colours, flavours, or preservatives. Just thoughtfully crafted sweets made the right way. Just as importantly, she wanted everyone to be able to enjoy them, which led to a commitment that still defines the brand today: every product is gluten-free.
As word spread, so did demand. What began as a passion project soon found its place in Tasmania’s vibrant food scene, with locals and visitors alike drawn to the unmistakable quality and flavour of Elly’s creations. The range expanded organically, guided by the same curiosity and care that sparked those early experiments.
Today, Elly’s offers a diverse and ever-evolving collection of confectionery, with twenty-eight products across multiple categories. At the heart of the range are four famously “addictive” popcorn flavours - each batch handmade and coated in rich, buttery caramel or carefully balanced savoury notes. Alongside the popcorn sits a selection of decadent fudges, including vegan varieties that don’t compromise on taste or texture. The much-loved rocky road, affectionately known as “Bang,” delivers a bold, indulgent combination of textures, while gourmet ices provide a refreshing twist using real fruit flavours. Florentines are baked fresh daily, and chocolate bars and seasonal creations round out a range designed to surprise and delight.
